A wine from Maremma and known in the world as the famous “Supertuscan”. Refined for 12 months in French and American barriques.

2009 – Sangiovese (Wine sold out, except for a few more bottles of Magnum)
2011 – Syrah (bottled in August 2013)
2012 – Merlot (bottled in March 2014)

Opt¡mus – the top of our production. Year by year the best harvest – bottled “in purezza” (100% pure Cabernet Franc) – to exalt the typical note
of the chosen grape variety. Opt¡mus 2011 has an intense ruby red colour, which will verge on garnet red with longer aging. The nose is intense, rich, ripe. Clear notes of ripe red fruits that end
in perceptions of spicy pepper and cloves. In the mouth it is firm, smooth and full-bodied, enveloping the palate. The tannins are soft but dense and quite involved in the wine’s overall balance. The finishing is long lasting and persistent.

Production: The grapes are harvested in full ripeness, destemmed and softly pressed. The fermentation takes place in stainless steel tanks at controlled temperature and is
carried out by autochthonous yeasts. The maceration lasts about a week at a temperature not exceeding 28° C. Aging Maturation in 225-litres oak barrels for 12
months and the refinement follows in steel vats at controlled temperature for 6 to 8 months.

The Estate of Fontino has within 6 hectares of olive trees, grown for oil for our consumption. The varieties chosen are typical of the Tuscan region, and among them remember the most important: Frantoio, Moraiolo and Leccino and Pendolino for pollination.
Our Extra Virgin Olive Oil Seal Fontino looks as light fruity smell of green olives with herbaceous aromas. The taste is fruity with hints of artichoke, slightly spicy, pleasantly bitter. The suggested use is definitely raw on fresh and cooked vegetables, on bruschetta, soups, vegetables and carpaccio. Particularly suitable on grilled meat.
Manually, from late October to late November. The olives are then stored in boxes with holes to allow perspiration, and the same day of the collection are taken to the mill for local processing.
The extraction process:
The oil is extracted at Frantoio San Luigi Caldana, through a traditional process (granite millstones and presses) and modern (extraction by centrifugation) cold.
Just obtained, the oil is stored in stainless steel containers and decanted periodically. The bottling, to the absence of expensive machinery, is done entirely at the mill.
The extra virgin 2008 it received important awards:
– 2nd place “fruity” the Oil Festival of the Metalliferous Hills.
– 3rd place “fruity” premium “Olivo Witch” on over 50 companies participating in the entire province of Grosseto.
Our oil 2010 he won the 1st prize in the category “light fruity”, while the oil in 2012 he won the 2nd prize in the category “fruity”
