Optimus is made from Ciliegiolo grapes that ferment spontaneously in large vats thanks to indigenous yeasts on the skins. Maturation takes place in oak barrels, where the wine remains for 10 months. With great care, all processes, from harvesting to pressing and bottling, are carried out by hand according to the biodynamic method.
